    Pectin and Pectinase Experiments

      Definition

Pectinase is an enzyme that breaks down pectin that is a fibre found in the cell walls of plants. Pectinase is used in the food industry for extraction of fruit juice and for winemaking and pectin is used for making jams and jellies.
